Cold Fermentation
Every loaf begins with a slow, cold fermentation process that develops complex flavors, superior digestibility, and an open, airy crumb structure.
We source only certified organic heritage wheat and rye, milled fresh to preserve nutrients and deliver a depth of flavor you simply cannot find in commercial bread.
No machines, no shortcuts. Each loaf and bagel is hand-shaped by Alina herself, honoring traditional European artisan techniques passed down through generations.
"We don't bake bread. We cultivate it."
— Alina, Founder

“Best sourdough in all of Florida”
I've been chasing a proper sourdough loaf since moving from San Francisco and I finally found it. The crust shatters perfectly, the crumb is open and chewy, and the flavor has that deep tang you only get from a real long ferment. I order every single weekend without fail.

“The jalapeño cheddar bagel changed my life”
I drive 35 minutes each way every Saturday and I would do it again in a heartbeat. The jalapeño cheddar bagel is genuinely one of the best things I've eaten in Orlando. Crispy outside, pillowy inside, and the cheese gets all caramelized on the bottom. My whole family is obsessed.

“Worth every penny and then some”
Alina's bread has completely ruined grocery store bread for me — in the best way. I can't go back. The seeded sourdough is my absolute favorite. I toast a slice every morning and it's the highlight of my day. The pre-order system is so easy and the pickup is always smooth.

“Our Saturday morning ritual”
We discovered Alina's at a local market and now it's a non-negotiable part of our weekend. We order Thursday night, pick up Saturday morning, and have a proper brunch at home. The everything bagels with cream cheese are unbeatable. Our kids ask for them by name now.

“Gifted a loaf to my mom — she cried”
I brought a country sourdough loaf to my mom's house and she said it reminded her of the bread from her childhood in Portugal. That's the highest compliment I can give. The fermentation flavor is so complex and the crust is absolutely perfect. This is real bread.

“Pre-order system is seamless”
As someone who hates complicated ordering processes, Alina's has nailed it. Order by Thursday, get a confirmation, pick up Saturday. Done. And the bread itself? Absolutely incredible. The rosemary olive oil loaf is something I think about during the week.

“Finally, real artisan bread in Orlando”
I grew up eating proper bread in Taiwan and finding good artisan bread in the US has always been a struggle. Alina's is the real deal. The fermentation is long, the ingredients are quality, and you can taste the care in every bite. I order the sesame bagels every week.

“We bulk order for the whole neighborhood”
We started ordering for ourselves and now we coordinate a group order for six families on our street. Everyone chips in Thursday night and we do a big pickup Saturday morning. It's become a whole neighborhood thing. Alina's bread has genuinely brought people together.

Yes — all of our sourdough loaves and bagels are made with wheat flour and contain gluten. Our kitchen is not gluten-free and we cannot guarantee the absence of cross-contamination. We do not currently offer gluten-free options.
Our products may contain or come into contact with: wheat/gluten, dairy (butter, cheese in jalapeño cheddar bagels), eggs, and sesame seeds. The cinnamon chip bagels contain cinnamon and sugar. If you have a severe allergy, please contact us before ordering so we can advise you properly.
We use 100% organic, unbleached wheat flour, filtered water, sea salt, and our own live sourdough starter — that's it for the base loaves. Specialty bagels use additional premium ingredients like aged cheddar, fresh jalapeños, fresh rosemary, and real cinnamon chips. No preservatives, no additives, ever.
Sourdough loaves are best enjoyed within 3–4 days at room temperature, or slice and freeze for up to 3 months. Bagels are best the day of pickup but stay great for 2 days. To refresh, pop them in a 375°F oven for 5–8 minutes — they'll taste just-baked again.
We're open to conversations about wholesale and local partnerships! Our current capacity is limited, but we'd love to hear from you. Send us a message through the Contact form with details about your business and needs, and we'll get back to you within 48 hours.
